Abstract

|
The present work was followed to determine the effect of malefic hydrazide on alliinase activity of garlic, Allium sativum L.
Alliinase activity was markedly inhibited by malefic hydrazide as compared with that of the untreated ones. No distinct differences were found in pattern of protein between MH treated and untreated garlic bulbs.
